In 2021, Schotman started producing molasses-based rum with natural fermentation. The fermentation tanks are located outside in the nature of the beautiful Achterhoek, so nature has free reign. The extremely long fermentation of up to 6 months gives the rum an exceptional aroma that will overwhelm you. Schotman is also original here.
The rum is distilled with pot and column still.
Of course no fragrance, color or flavorings have been added.
The magic of natural fermentation: a journey through terroir
Natural fermentation is an ancient process that transforms simple ingredients into something extraordinary. This age-old technique embraces the whims of nature, creating flavors and aromas that are as diverse as the environments in which they are crafted. One fascinating example of this process unfolds in the Achterhoek region of the Netherlands, where a wash underwent natural fermentation outside up to six months, allowing the local elements to shape its character.
The effect of temperature fluctuations
Unlike the Caribbean, where fermentation temperatures consistently hover between 28 °C and 33 °C, the Achterhoek experience varies significantly, ranging from a brisk 10 °C to a warm 30 °C. This temperature fluctuation plays a crucial role in the fermentation process. As the climate shifts, different yeast strains come into play, each contributing its unique profile to the final product. In this way, the wash becomes a living testament to the terroir—a reflection of the land, the weather, and the microbial life present in that specific locale.
The unique taste of the Achterhoek
The result of such natural fermentation is nothing short of magical. The flavors produced during this time are incredibly funky, offering a vibrant tapestry of tastes that can only be achieved through this organic method. Each batch is distinct, carrying notes of fruitiness, earthiness, and sometimes even hints of spice, all attributed to the myriad of yeasts that take center stage throughout the fermentation process.
A spirit that captures the essence of the Achterhoek
When it comes to the final spirit—single barrel, cask strength rum—the complexity of flavors reaches new heights. This rum embodies a piece of the Achterhoek, capturing the essence of its environment and the unpredictable nature of fermentation. Each sip offers an unexpected journey, revealing layers of flavor that speak to the dedication and patience required to produce such a remarkable spirit.
In conclusion, the allure of natural fermentation lies not only in the craftsmanship involved but also in the extraordinary results birthed from it. The interplay of temperature, time, and local yeast creates a dynamic flavor profile. It’s a delightful reminder that, much like the landscapes we inhabit, our most cherished spirits are shaped by the world around us. Whether it’s in the flat landscapes of the Netherlands or the sun-kissed shores of the Caribbean, natural fermentation tells a story that transcends borders and unites us through taste.
